Leftover Rice Recipes- Khichdi cutlets

Hello, What do you do if you have leftover rice or khichdi, I always love experimenting with flavours and textures in kitchen, so one day when we had ample of khichdi left, I didn't feel like giving it away or throw.. I despise throwing away good food, so I decided to make something out of it, I started with making paranthas out of it initially but then my husband didn't enjoy them as much, so to give it a new taste. So here goes the simple recipe of khichdi cutlets for all of you to try with your babies and baby's father who are no less than a baby: 1 bowl of leftover Khichdi 1 bowl of mixed parboiled veggies (beans,carrots,peas,lauki) 1-2 green chillies 1/2 cup of boiled mashed potatoes (optional) as I already had potatoes in my khichdi 1/2 cup of grated paneer (it enhances it proteins content) 1/2 cup of chopped coriander leaves Add all spices to give it a nice flavour, I usually add chat masala, kitchen king masala, roasted cumin powder, black salt, bit of red chili powder. Mix all of it together to make small balls of it. If you have trouble making balls out of it, add 1-2 spoons of roasted besan Heat a tawa, add some oil and shallow fry the balls.. once cooked from both sides, serve hot with ketchup or keep it in tiffin.
