TGIF !! Enjoy the weekend

So finally the weekend is here.. I anxiously wait for Friday so much, and I am sure everyone else also. There is something very special about Friday and Saturday.
So, What is the plan for tonight? I will share one of my fav. recipe with all of you. Its not something unique for Indians, specially North Indians but I have given it my own twist. This is Rajma-Chawal or you can say it Kidney Beans with Gravy and Rice.

3/4 cup rajma (kidney beans)
1/4 cup whole urad dal (black gram)
1 1/2 cups steamed basmati chawal (Rice)
1/2 tsp cumin seeds (jeera)
1 small stick of dalchini (cinnamon stick)
1-2 bay leaves
1/2 cup chopped onions
1/2 tbsp finely chopped ginger
1/2 tsp finely chopped garlic
1 to 2 chopped green chilly
1 cup tomato puree
1/4 tsp turmeric powder
1 tbsp coriander powder
1/2 tsp red chilly powder
1 tbsp amchur
1 tbsp oil
salt to taste

For garnishing:
1 tsp- home made butter
2-3 tbsp chopped coriander leaves
1/4 tsp finely sliced ginger
slice of a lemon

Method:

Soak the rajma and dal in water overnight. Drain it. Now along with 3-4 cups of water add turmeric powder, coriander powder and salt. Pressure cook for 4 to 5 whistles or till it softens. When the pressure is released add amchur and mix well.
Heat the oil in a pan. Add the cumin seeds, bay leaf and cinnamon stick and allow them to crackle.
Add the onions and sauté for a few minutes till they are translucent. Add the garlic, ginger and green chilly and sauté for a few more minutes. Add tomato puree and red chilly powder.
Simmer for a few minutes and add the cooked rajma and dal. Mix gently.
Add lot of coriander leaves, ginger, lemon and butter for garnishing.

My twist:
Put 1/2 tsp chaat masala for the distinct flavor

Serve with Rice.
Serve hot.

This post evoked mouthwatering memories of the rajma chawal I enjoyed in dhabhas when I was "up north". I am going to make this recipe tonight.
